Air Fryer Stuffed Peppers

For this recipe, I'm using my Instant Pot to prepare the filling and my air fryer to bring everything together. The filling for the stuffed peppers can also be prepared on the stove in a large covered pot.

Ingredients

1 pound ground beef

1 carton beef broth (approximately 4 cups)

1 can corn

1 large can diced tomatoes

1 can black beans, drained

1 cup salsa
-
2 cups rice
-
1 tbsp taco seasoning
-
4-8 bell peppers, cut in half and deseeded

1 cup grated cheddar cheese

Olive oil, to prepare prepare peppers

Salt & black pepper, to taste
Directions
Combine ground beef with broth, tomatoes, corn, black beans, salsa, rice, and taco seasoning in an Instant Pot.
Pressure cook the filling ingredients on the rice function, of the Instant Pot, for 15 minutes. Quick release the pressure to complete cooking.
Remove lid from pressure cooker and stir in salt and black pepper, to taste.
Cut 4 bell peppers in half and deseed them. Brush olive oil all over the bell pepper halves to coat them. Place in air fryer for 7 minutes at 400°F.
Fill each cooked pepper half with ground beef and rice mixture. Sprinkle each half with shredded cheese.
Line the air fryer with air fryer parchment paper. Place filled peppers into the basket and air fry for 7 minutes at 400°F, until cheese is golden brown.

*Substitute your favourite ground protein for the ground beef in the recipe.
