I used my Instant Pot to cook the beef roast to perfection. Once the beef is cooked, this recipe comes together in under an hour.
Ingredients

1 beef roast, your choice of cut, divided in half

Cumin, to taste

Salt & Black pepper, to taste

1 carton beef broth
-
450 gram block of cheddar cheese, shredded

½ onion, thinly sliced
-
2 bell peppers, thinly sliced
-
2 green onions, sliced
-
¼ cup butter
-
⅓ cup flour
-
1 cup sour cream
-
Pickled jalapeños, to taste (optional)

1 package large flour tortillas
Directions
To prepare roast beef:
Cut roast in half and season both sides with cumin, salt, and black pepper.
Place roast into the Instant Pot. Pour beef broth over the roast and secure the pot lid. Pressure cook beef according to appliance instructions.
To prepare the bake:
Preheat oven to 375°F.
While roast beef cooks, thinly slice onions, peppers and green onions. Set aside.
Remove the roast beef from Instant Pot and set aside to rest. Pour the beef broth into a small bowl.
Set the Instant Pot to sauté and melt the butter. Add sliced onions and sauté until softened.
Sprinkle flour over the onions and mix well. Pour the beef broth back into the pot and whisk until the broth thickens.
Stir sour cream into the broth and bring the mixture to a boil. If you like a bit of spice, you can add jalapeños to the sauce and stir.
Shred or slice the cooked roast beef. Shred cheddar cheese.
Line a 9x11 inch baking dish with flour tortillas. Place beef into baking dish and top with peppers. Sprinkle half of the shredded cheese over the beef and peppers.
Pour half of the onion and jalapeño sauce over the layer of shredded cheese. Top with 2 tortillas and fold over remaining tortilla edges to enclose the beef and vegetables.
Pour remaining sauce over the casserole and sprinkle with remaining cheese.
Bake for 30 minutes, until cheese is melted and golden brown. Garnish with sliced green onions. Slice and serve.
