This recipe is a family favourite! It's in my personal recipe book of recipes I've collected from my childhood. I'm so happy to share it with you.
Ingredients

2 cups all purpose flour
-
½ cup butter, melted
-
7 eggs
-
1 cup cream +1 cup water (or 2 cups milk)

1 tablespoon sugar
-
1 teaspoon cinnamon
-
½ teaspoon salt

Oil, for frying

Your choice of jam or preserves
Directions
Heat a large frying pan over medium heat.
In a mixing bowl, add flour and sugar. Make a well in the flour and add the eggs.
Pour in cream and water (or milk) and whisk the batter well. Sprinkle cinnamon and salt over the batter.
Pour in melted butter and whisk until mixture is well combined and free of lumps.
Add oil to the pan to heat it up. Ladle in the batter and swirl until the batter covers the bottom of the pan. Flip the blintz when the edges are slightly crisp.
Once cooked, place onto a cutting board or plate. Spread jam, fruit, or ricotta cheese over the blintz and then roll it up.
Keep filled blintzes warm and soft under a towel until all of the batter is cooked.
