This is a recipe that is very close to my heart. Our family friend, who is the sister of our dear friend who married me and my hubby, shared her Bone Broth recipe with me. With her permission, I am sharing the recipe with you. I hope that you enjoy it as much as my family does.
Ingredients

Bones (a mix or stick to one type), 2 chicken carcasses, one big ham bone, or several beef bones

2 inch piece of unpeeled ginger, sliced

2 inch piece of unpeeled turmeric, sliced

1 small cinnamon stick

2 tablespoons coarse salt

1 tablespoon whole peppercorns (these help to activate the turmeric’s anti inflammatory properties)

2 tablespoons apple cider vinegar (draws calcium out of the bones)

2 celery stalks, cut into thirds

2 whole unpeeled carrots, cut into thirds

2-3 bay leaves

1 onion, quartered (no need to peel but cut off root end)

3 cloves garlic, unpeeled and cut in half

Any veggie scraps that you have on hand can be added
Directions
In a large Instant Pot, add veggies, bones, and spices. Fill the pot to the top line.
Set your timer for 3 hours (or 2 cycles of 90 minutes)
When cycle(s) completed, release the pressure and then lift the lid off of the pot.
Remove bones and veggies to a colander, that has been placed over a large bowl. allow bones and veggies to drain broth.
Put a large strainer or cheesecloth over a large pot and pour broth over to strain any small bits left behind.
Prepare 4 or 5, 1 quart sealer jars ready and, using a funnel, fill the jars up and secure lid. (A fat layer may form once jars are secured which helps seal the broth. Fat layer can be used to sauté vegetables for another recipe).
Once the broth is chilled, you’ll have a rich, concentrated broth that can be diluted for use in soups or stews (each quart can yield 2 quarts of homemade broth).
