Coming up with a variety of school lunch ideas can be a challenge. My sons love these cups and my youngest enjoys them as part of his school lunch rotation. They are budget friendly and delicious which is a win for me and my family!
Ingredients

1 pound ground beef

1 small onion, chopped
-
2 ½ cups marble cheese, shredded

1 can (12 oz) evaporated milk
-
2 tablespoons butter
-
2 cups of macaroni, cooked

2 eggs, beaten

Salt & black pepper, to taste
Directions
Preheat oven to 375ºF.
Grease muffin tin and set aside.
Melt 1 tablespoon of butter in a pan over medium-high heat. Add ground beef and onion to the pan and cook until beef is thoroughly brown and onions are softened. Drain any fat from the pan before setting aside.
Cheese Sauce:
In a saucepan, melt 1 tablespoon of butter over medium heat.
Pour evaporated milk into the saucepan and add in 1 ½ cups of shredded cheese. Stir until cheese is melted.
Season cheese sauce with salt and pepper and stir well. Remove the sauce from the heat.
In a large bowl, combine cooked macaroni, beef mixture, cheese sauce and beaten eggs.
Fill each muffin cup evenly with mixture and then press each cup down. Top with remaining 1 cup of cheese.
Bake the cups in a preheated oven for 15-20 minutes, or until golden.
Allow the cups to sit for a few minutes before removing from the muffin tin.
