I made this recipe to go with my yummy fried pork chops and apple compote. I topped the salad with sweet and tangy dried cranberries to add another pop of flavour.
Ingredients

1 butternut squash, peeled and cubed

1 ½ cups quinoa, cooked according package instructions

5 cloves garlic, minced
-
½ cup dried cranberries
-
1 lime, juiced
-
Drizzle of olive oil
-
Salt and black pepper, to taste
Directions
Preheat oven to 350°F.
Cook quinoa according to package directions.
Line a baking sheet with parchment paper.
Peel and dice butternut squash and place onto baking sheet. Sprinkle minced garlic over the squash.
Drizzle squash with olive oil and season with salt and pepper. Toss to coat the squash.
Roast squash in oven for 30 to 45 minutes.
Place cooked quinoa into a salad bowl. Add roasted squash, along with any pan juices, to quinoa.
Sprinkle dried cranberries over the squash and pour the juice of the lime into the bowl. Mix salad until well combined.
