Pork carnitas are definitely a family favourite! I slow cooked my pork roast in a Dutch oven which allowed all the flavours to come together just right. I serve my carnitas with pico de gallo and arepas.
Ingredients

1 pork picnic roast, cubed

1 tbsp salt

1 tbsp black pepper
-
2 tbsp Tajin seasoning

4 oranges, quartered
-
2 lemons, juiced
-
6 cloves garlic, minced

¼ cup olive oil
-
A generous drizzle of honey
Directions
Preheat oven to 325°F.
Cut pork roast into large cubes. Place into Dutch oven.
Sprinkle salt, pepper, and Tajin seasoning over cubed meat.
Add peeled garlic cloves to food processor and mince well. Juice 2 oranges and lemons and pour into your food processor. Add the remaining orange quarters to the food processor and blend well.
Pour garlic and juices over the roast and stir to combine.
Cover Dutch oven and roast in oven for 3-4 hours.
Once pork is cooked through, remove from the oven and allow to rest for 15 minutes.
Shred roast and add to a baking dish. Drizzle meat with with honey and broil until crisp on top.
Serve your roast along side salad, pico de gallo, arepas, or black beans.

Recipe Note
*For a non traditional option, chicken breasts or thighs can be substituted for the pork.
