This easy to follow dish combines tasty chicken breast with a medley of bell peppers, carrots, and onion with a delicious sweet sauce that brings the whole dish together. The crunch of the cashews adds another element to this Asian inspired meal.
Ingredients

4 bell peppers, chopped

3 carrots, sliced

3 green onions, sliced

1 large yellow onion, diced

3 chicken breasts, cubed
-
½ cup cornstarch
-
2 cups cashews
-
Vegetable oil, for frying pan

Fresh ginger, thumb sized

3-5 cloves garlic
-
¼ cup rice vinegar
-
1/8 cup ketchup
-
1/8 cup honey
-
1/8 cup soy sauce
-
½ cup sweet chilli sauce
-
½ cup chicken broth
-
¾ tsp salt
-
¾ tsp black pepper
Sweet Sauce
Directions
Prepare peppers, carrots, onion, and green onion. Set aside.
Cube chicken breast and add to a freezer bag that contains ½ cup of cornstarch. Shake chicken to coat with corn starch. Set aside.
Heat vegetable oil in a wok or a large frying pan over medium heat.
Add all ingredients for the sweet sauce into your mini food processor or blender and purée until well combined.
Add cubed chicken to your heated frying pan and sauté until lightly crisp.
Add veggies to chicken and mix well. Pour sauce over mixture and combine to coat all ingredients.
Cover chicken and vegetables and cook for approximately 12 minutes over medium heat.
Add two cups of cashews and turn up the burner to medium-high heat and cook until the sauce thickens.
Garnish with sliced green onions. Serve with cooked white rice (or your preferred starch)*

This chicken dish would also be tasty with chow mein, udon, or rice noodles.
