I love a simple and tasty one pan meal, especially on days when life gets hectic. The ingredients come together quickly, in just under 40 minutes, and turns out delicious every time.
Ingredients

1 white onion, diced

2 garlic cloves, finely diced

¼ cup butter
-
2 chicken breasts, cubed
-
6 cups mushrooms, diced
-
1 cup white wine
-
1 tablespoon Dijon mustard

2 cups white rice
-
900 mL chicken broth
-
2 bay leaves
-
Salt & black pepper, to taste
Directions
Heat a large pan over medium heat. Melt butter in the pan and then add the onion, garlic, and cubed chicken. Sauté until onions start to caramelize.
Add mushrooms, white wine, and mustard to the pan. Sauté until mushrooms soften.
Pour rice and chicken broth into the pan. Add 2 bay leaves and stir well.
Simmer on medium heat, uncovered, for 25 minutes.
Reduce heat and cover the pan to allow ingredients to simmer for 10 minutes. Sprinkle with salt and pepper, to taste, prior to serving.
