Warm, soothing, and packed with fresh ingredients, this hearty soup is the epitome of comfort on a chilly day or when you need a little pick-me-up. Treat yourself to a pot of soup that is budget friendly and delicious.
Ingredients

1 cooked chicken carcass

8 cups of water

2 whole carrots, peeled

1 tbsp of Italian seasoning

2 tsp salt

Meat from the chicken carcass

¼ cup unsalted butter
-
1 medium onion, finely chopped
-
2 carrots from the broth, sliced

3 celery stalks chopped
-
4 cloves of garlic, minced
-
1 bell pepper, diced
-
2 tbsp yellow mustard
-
¾ cup dry white wine
-
Italian seasoning, to taste

Salt and black pepper, to taste

1 box (410 grams) your choice of pasta noodles*

Directions
Add chicken carcass and 2 whole carrots to a large pot. Cover chicken and carrots with cold water (approximately 8 cups). Sprinkle in Italian seasoning and salt. Bring stock to a boil. Reduce heat and simmer while you prepare your ingredients to make the soup.
Dice onion, bell pepper, and celery. Mince garlic cloves.
Heat butter, in a large soup pot, over medium heat. Add diced vegetables and minced garlic and sauté until they are softened.
Season vegetables with Italian seasoning, salt, black pepper, and mustard. Stir to combine.
Pour white wine into pot to deglaze, scraping up any brown bits from the bottom of the pot. Allow wine to simmer for a couple of minutes.
Remove the broth from the stove and strain it into your pot of veggies.
Remove chicken from carcass and slice carrots. Add to the soup pot and stir to combine. Adjust seasoning, as needed. Allow soup to simmer on the stove.
While the soup simmers, cook your choice of noodles (or starch of your choice) according to the package instructions. Drain and set aside.
Just before serving, add the cooked noodles to the pot. Stir until well combined and heated through.

*You can use rice, diced potatoes, or quinoa in place of the pasta noodles.
