You can use chicken breasts or thighs, for this recipe, and it will still turn out great! The tangy peanut dressing comes together, quickly, in a mini food processor so you can whip these wraps up in no time.
Ingredients

½ cup sweet chilli sauce

¼ cup peanut butter

2 cloves of garlic, minced

¼ cup oil

¼ cup rice vinegar
-
1 tablespoon soy sauce
-
Salt and black pepper, to taste

Cucumbers, thinly sliced

Carrots, finely grated
-
Cilantro, finely chopped
-
Cabbage, finely sliced (A bag of coleslaw mix can also be used).

⅓ cup peanuts

4 chicken breasts or thighs, thinly sliced

⅓ cup sweet chilli sauce

1 package large flour tortillas

Directions
Add the dressing ingredients to a mini food processor and purée until the dressing is combined and smooth. Set aside.
Prepare your vegetables and place into a medium sized bowl. Toss the vegetables with the dressing. Top with peanuts and stir.
Heat oil in a large pan over medium heat.
Thinly slice 4 chicken breasts or thighs. Add the chicken to the pan with sweet chilli sauce and fry until the chicken is cooked through.
Warm tortillas in preparation for making your wraps. Layer the veggies and chicken into a warm tortilla and fold to close.
