Ingredients

6 chicken thighs, bone-in & skin-on

4 tablespoons brown sugar

2 tablespoons chilli powder

4 cloves garlic, minced

½ teaspoon cayenne pepper (optional, for heat)

¼ cup vegetable oil
-
2 tablespoons apple cider vinegar
-
1 teaspoon salt
-
½ teaspoon black pepper
Directions
Make the Marinade:
In a small bowl, mix together brown sugar, chilli powder, minced garlic, salt, oil, vinegar, and cayenne (optional). Mix until sugar partially dissolve.
Marinate to Freeze:
Place the chicken thighs into a large freezer bag. Pour marinade over the chicken, seal the bag, and toss to coat.
Place marinated chicken in the freezer to use at a later date. Don’t forget to date the freezer bag.
When Ready to Cook*:
Remove marinated chicken from the freezer and place into the fridge to thaw overnight.
Preheat oven to 400ºF.
Place chicken thighs onto a lined baking sheet (using parchment paper or foil). Bake in oven for approximately 35 to 45 minutes or until the internal temperature reaches 165ºF (75ºC).
This chicken recipe is also perfect for the BBQ. Grill chicken for approximately 35-45 minutes or until the internal temperature reaches 165ºF (75ºC)

*If you are preparing and cooking chicken, on the same day, place marinated chicken in the fridge for a couple of hours prior to cooking.
