Coconut Lime Peanut Chicken is a coconut lover's delight. The tender chicken and creamy coconut peanut sauce, with a hint of lime, is delicious over a bed of rice alongside a fresh cucumber salad.
Ingredients

2 cups rice

6 chicken thighs, skin on

2 limes, zested and juiced

2 cloves garlic
-
¼ cup peanut butter
-
1 can coconut milk
-
¼ cup olive oil
-
6-8 mini cucumber, chopped
-
½ bunch cilantro, minced
-
Granulated garlic, to taste

Salt and black pepper, to taste
Directions
Cook rice according to the package instructions. Set aside.
Prepare the coconut peanut sauce in a food processor using garlic cloves, the juice of 1½ limes, peanut butter, ½ teaspoon of salt and coconut milk. Blend until ingredients are well combined.
Season chicken thighs, skin side up, with salt, pepper, and lime zest.
Heat ¼ cup of oil in a large pot, over medium heat. Place chicken into the pot seasoned side down. While the chicken is frying, season the other side of the chicken with granulated garlic, salt, and pepper.
Once the chicken thighs are browned and crispy on one side, flip each thigh over and then add the coconut peanut sauce. Simmer chicken on low-medium heat until chicken is cooked through.
Prepare a simple salad of chopped cucumber and minced cilantro, drizzled with the juice of the remaining half of the lime. Sprinkle salad with salt and pepper, to taste.
Plate your dinner by placing a piece of chicken over a bed of rice. Don’t forget to pour a generous spoonful of the coconut peanut sauce over your chicken and rice. Serve with cucumber salad.
