This refreshing salad combines tender chicken, crisp bacon, tangy dried cranberries, and crisp apples for a perfect lunch or light dinner. The balsamic dressing is the perfect addition to complete this delicious salad.
Ingredients

3 pounds whole chicken or chicken pieces

Olive oil, drizzled over the chicken

Seasoning salt, to taste

2 heads romaine lettuce
-
1 package of bacon, 500 grams
-
2 apples, cored and thinly sliced
-
½ large red onion, thinly sliced

5 cloves garlic
-
⅓ cup olive oil
-
1 tsp yellow mustard
-
1 tbsp honey, optional
-
Salt and black pepper, to taste

Everything but the Bagel seasoning
-
Dried cranberries
-
Pumpkin seeds
-
Sunflower seeds

Directions
To roast the chicken:
Preheat oven to 350°F
Drizzle olive oil over the chicken. Season chicken with seasoning salt. Roast in oven for approximately 1 hour, or until fully cooked through.
For the Salad:
While chicken is in the oven, fry bacon until desired crispness is reached. If using an air fryer, set it to 400°F and cook for 11 minutes.
Chop lettuce into bite sized pieces, wash, and spin dry in a colander. Place prepared lettuce into a large bowl or on a large platter.
Cut apples into quarters, remove core, and thinly slice. Add to the lettuce.
Thinly slice onion and add to lettuce.
Balsamic Dressing:
Use a mini food processor to combine garlic, balsamic vinegar, olive oil, mustard, honey, salt, and black pepper.
Assemble the Salad:
After chicken has fully cooked, allow to cool slightly. Shred chicken and set aside.
Add shredded chicken to lettuce, apple slices, and onion slices.
Pour dressing over entire salad. Top with desired seasoning and salad toppers.*
Chill in refrigerator until ready to serve.
