My Mom added this biscuit recipe to a cookbook she made for my family. I just love heirloom recipes! I’m going to share her original recipe but I’ll add some substitute options if you don’t have all the ingredients on hand.
Ingredients

2 cups all purpose flour

4 teaspoons baking powder

¼ teaspoon salt

½ cup unsalted butter, chilled and diced

½ cup aged cheddar cheese, shredded

2/3 cup half & half, plus extra for brushing over biscuits

250 grams cream cheese (plain or herb & garlic)

6 slices crispy bacon, chopped
Directions
Preheat oven to 450°F.
Sift flour, baking powder, and salt into a mixing bowl. Add diced butter and mix with flour, using a pastry cutter, 2 forks, or your hands.
Shred the cheese and sprinkle into flour mixture. Mix well.
Make a well in the flour mixture and add the cream. Lightly mix until blended. Add more cream, if necessary.
On a floured counter top, roll out the dough until approximately ¼ inch thick.
Spread cream cheese over the dough and then sprinkle with chopped bacon. Roll dough up like a jelly roll.
Slice the rolled dough into 1 inch slices (approximately 2 fingers wide). Place each biscuit onto a parchment lined baking sheet.
Press biscuits down lightly and then brush tops of biscuits with cream or an egg wash.
Bake biscuits in preheated oven for 20 to 25 minutes, or until lightly browned.

Recipe Note
*Half & half cream can be substituted with evaporated milk and a bit of water mixed together.
* In place of the cream cheese and chopped bacon, you can substitute extra shredded cheese and sour cream.
