Packed with plant based protein and robust garlic flavour, my recipe for Garlic Rice and Beans is always a hit. Not only is it nutritious but it’s delicious!
Ingredients

1 ½ cup rice (I like to use Basmati)

4 garlic cloves, minced

2 tablespoons olive oil

1 can black beans, drained

3 cups water
-
Salt and black pepper, to taste
Directions
Heat oil, in a medium sized pot, over medium heat. Sauté minced garlic until fragrant.
Pour rice into pot and season with salt and pepper. Stir the rice to coat it in the oil and garlic.
Pour in water and black beans. Stir well and allow water to come to a boil.
Cover the pot and reduce heat to low. Cook rice for approximately 20 minutes, or until rice is softened.
