I recently whipped up this salad for a day at the lake. It was nutritious, delicious and (most importantly) satisfied the hunger for a group of teenage boys. The grilled chicken was a great protein to use but other protein sources could work just as well.
Ingredients
-
4-6 grilled chicken thighs, grilled and chopped
-
Montreal chicken spice, according to taste.
-
1 bottle of Kraft Chicken and Rib BBQ sauce
-
900 gram box Rotini pasta
-
1 red onion, minced
-
350 grams mozzarella, cubed
-
3 cups grape tomatoes, sliced in half
-
5 garlic cloves, minced
-
2 lemons, juiced
-
1 ½ cups mayonnaise
-
Salt and black pepper, to taste
Aioli Style Dressing
Directions
Prepare the box of rotini pasta according to the package instructions. When cooked, drain, rinse with cold water, and allow to cool.
Season chicken thighs with Montreal spice and grill on the BBQ over medium/high heat. Brush with chicken and rib sauce while grilling and once the chicken is cooked through.
Mince the onion and set aside. Slice tomatoes and cube the cheese and set aside.
Once the chicken thighs are cooked through, remove from the grill and allow to chill in the refrigerator with the pasta.
Once, the chicken is chilled, chop into bite sized pieces and add to a large salad bowl.
Add cooked pasta, cheese, onions and tomatoes to the chopped chicken and return the bowl of ingredients to the fridge while you prepare the dressing.
Prepare the dressing in a mini food processor by placing in garlic cloves, lemon juice, mayonnaise, salt, and pepper. Pureé until dressing is well combined.
Pour dressing over the salad ingredients and toss well.
Cover salad and refrigerate or keep cold in a cooler until ready to serve.
Enjoy 🖤
