Instant Pot Balsamic Pork Loin

The sweet and savoury flavour of this pork loin recipe is one of my favourites. This roast can be cooked in the oven but the roast turns out perfectly in the Instant Pot.
Ingredients

2 pound pork loin roast

1 cup brown sugar

2 - 3 garlic cloves, minced

1 teaspoon mustard
-
1 tablespoon soy sauce
-
½ cup balsamic vinegar
-
2 tablespoons corn starch
-
½ cup cold water
-
Salt and black pepper, to taste
Directions
Turn Instant Pot onto sear function. Season pork loin with salt and pepper.
Sear roast on all sides until golden brown.
In a mini food processor, blend together brown sugar, garlic, mustard, soy sauce, balsamic vinegar, cornstarch, and water. Pour sauce into the Instant Pot to cover the roast.
Switch Instant Pot to the Meat function, cover, and cook pork loin for 30 minutes.
After 30 minutes, remove pork loin from the pot and set aside. Turn the Instant Pot to sauté function.
Slice the pork loin into medallions and add back to the pot and cook until the balsamic sauce reduces.
