Italian Wedding Soup

This soup has everything needed to bring warmth and comfort to your family dinner. Filled with meatballs, pasta noodles, and fresh veggies, this simple and classic soup will be on repeat in your kitchen.
Ingredients

1 pound lean ground beef

1 egg
-
⅓ cup breadcrumbs

1 tablespoon Italian seasoning

4 cloves garlic, minced
-
1 onion, chopped
-
½ to 1 cup of any diced vegetable that you’d like (I chose red peppers and carrots for my recipe reel)

2 tablespoons olive oil
-
½ cup red wine
-
2 tablespoon soy sauce
-
1 litre beef broth
-
3 litres water
-
1 box of any small pasta

Spinach, 4 cups fresh or 2 blocks frozen

Salt and Black pepper, to taste
Directions
Turn on your Instant Pot to the sauté function, and heat up olive oil.
Sauté onion and garlic in olive oil until softened. Stir in diced vegetables and the spinach.
Add wine, soy sauce, broth, and water. Bring mixture to a boil.
While soup broth is boiling, make meatballs by combining ground beef, bread crumbs, the egg, Italian seasoning, and 1 teaspoon of salt. Use your hands to mix the ingredients well and form into small meatballs (my IG reel shows my hack for making uniform meatballs).
As you form each meatball, add to the boiling broth to cook meatballs through. Season with salt and Italian seasoning.
Fifteen minutes before serving soup, add pasta to boiling soup and stir to combine.
Once pasta is cooked, turn off Instant Pot. Season soup with salt and black pepper, according to taste.
