All the taste of a jalepeño popper in a delicious casserole. Combined with chicken breasts, crispy bacon, and two types of cheeses, this will become a family favourite in no time.
Ingredients

4 to 5 chicken breasts, sliced in half lengthwise

1 brick cream cheese, softened

4 jalepeños, quartered and seeded

2 cups cheddar cheese, grated

1 package bacon, cooked and chopped into small pieces

Salt and black pepper, to taste
Directions
Preheat oven to 375ºF.
Slice chicken breasts in half, lengthwise, and season both sides with salt and pepper. Place into an oven safe casserole dish.
Spread the whole brick of cream cheese evenly over the chicken breast.
Place quartered jalepeños over the cream cheese in a layer. Top with a layer of grated cheese and finish of with chopped bacon.
Cover the casserole and bake in preheated oven for one hour.
I served the casserole over rice but this would also be perfect over any starch of your choice.
