I used vanilla cake mix to make these cookies and, boy, did they turn out well! This is a great recipe to get your littles baking in the kitchen.
Ingredients

1 box French vanilla cake mix

2 eggs
-
1 lemon, zested and juiced

¼ cup oil

Icing sugar, for rolling cookie batter

A couple drops of yellow food colouring, optional
Directions
In a mixing bowl, combine cake mix with 2 eggs, oil, lemon zest, and lemon juice. Mix well until smooth.
Cover the batter and chill in the refrigerator for 1 hour.
Once the batter is chilled, you can add food colouring and stir to distribute thoroughly.
Preheat oven to 375°F.
Using a cookie scoop, scoop up dough and drop into a bowl of icing sugar. Coat each ball of cookie dough well and place onto a parchment lined baking sheet.
Bake cookies for 10 minutes.
Remove cookies from the oven and allow to cool on a baking sheet before serving.
