This mango marinade comes together in no time and brings the pork loin roast to another level. The combination of sweet and savoury flavours is so delicious, you'll will make this recipe again and again.
Ingredients

2 pound pork loin

3 mangoes, peeled & pureed

¼ cup soy sauce
-
1 cup water
-
½ teaspoon ginger, minced

1 garlic clove, minced

3 tablespoons brown sugar

2 tablespoon cornstarch
Directions
Preheat oven to 325°F.
In a food processor or blender, combine mangoes, soy sauce, water, ginger, garlic, brown sugar, and cornstarch. Pureé ingredients to bring marinade together.
Place roast into a baking dish. Pour marinade all over the roast and cover the dish with a lid.
Bake roast in preheated oven for approximately 2 hours.
Once roast is cooked through, remove from oven and allow it to rest at room temperature. Slice or shred the pork to serve for dinner.
