This salad is easy to put together using the staples found in your fridge and pantry (also, it’s budget friendly). Enjoy tasty meatballs and fresh salad combined together to make the perfect quick lunch or light dinner.
Ingredients

Romaine Lettuce

Roma Tomatoes

Onions, white or red

Bell Peppers
-
Black olives
-
Pickles
-
Banana peppers

Italian dressing

1 large can or jar of tomato sauce
-
1 kg lean ground beef (or protein of your choice)

1 cup of bread or cracker crumbs

2 eggs
-
2 cloves of garlic, minced

2 tbsp Italian seasoning

½ tsp salt
-
½ tsp black pepper

½ cup carrot, finely diced
-
½ cup celery, finely diced

½ cup onion, finely diced
For the Salad:
For the Meatballs:
Directions
Prepare the salad and place on a large platter.
Combine the protein with bread crumbs, eggs, veggies, and spices. Form into meatballs.
Pour tomato sauce into a large pot. Add meatballs to sauce and simmer until the meatballs are thoroughly cooked.
Place cooked meatballs on top of salad and sprinkle with grated mozzarella or Parmesan cheese.

Recipe Note
I use the Hunt’s brand of tomato sauce because it’s what my Grandma and Mom used. Check your local flyer for sales so you can stock up on your favourite tomato sauce.
