Meatballs in Gravy
by Jesi LopezI love serving meatballs in gravy when I have a big crowd to feed (ahem, teenagers) or even as an easy weeknight dinner. I used my Instant Pot to make this recipe but it could also be prepared on the stove top.

This quick and easy recipe is serious love and comfort in a pot. Using my Instant Pot, I was able to cook the meatballs to perfection. The simple and delicious gravy is the cherry on top!
Ingredients

1 can mushroom soup

1 tablespoon ketchup

2 tablespoons soy sauce
-
1 cup red wine
-
4 cups beef broth
-
1 tablespoon cornstarch
-
¼ cup water
-
2 pounds extra lean ground beef

2 eggs
-
1 cup bread crumbs
-
2 garlic cloves, minced
-
2 tablespoons Italian seasoning
-
1 teaspoon salt

Directions
Gravy:
Turn Instant Pot to sauté function and add soup, ketchup, soy sauce, red wine, and broth.
Whisk all ingredients together and bring to a boil.
Once all of the meatballs have been cooked through and removed from the pot, thicken the gravy with a slurry of corn starch and water.
Heat gravy until thickened and then serve over meatballs.
Meatballs:
In a large bowl, mix ground beef with eggs, breadcrumbs, garlic, Italian seasoning, and salt.
Roll ground beef mixture into balls.
Carefully drop the meatballs into boiling gravy, in batches. Cook each batch for 5 minutes.
If making ahead of time, place all meatballs into the Instant Pot and turn to the slow cook setting. Place lid on Instant Pot and cook meatballs until dinner is ready to serve.
Thicken gravy and serve over meatballs and the side dish of your choice.
