These mini quiches are easy, portable, and really delicious! The fact that they are budget friendly is also a big bonus. I used ham and cheese in the filling but so many different protein and vegetable combinations can be substituted.
Ingredients

24 tart shells (thaw if purchased frozen)

8 eggs

1 package (175 grams) deli ham, chopped

½ cup cheddar cheese (finely shredded)

2 tablespoons chives, chopped

½ cup evaporated milk

Salt & black pepper, to taste
Directions
Preheat oven to 375ºF.
In a large bowl, whisk together eggs, milk, cheese, salt and pepper.
Place the thawed tart shells onto a baking sheet and evenly sprinkle the chopped ham and chives into each tart shell.
Pour egg mixture into each tart shell, until full.
Place tarts into the preheated oven and bake for 15-20 minutes until set and golden.
