This skillet recipe is not only healthy but delicious, with fresh vegetables, chicken, and rice. Quick and easy to prep and cook for those hungry family members.
Ingredients

1 pint mushrooms, sliced

1 package fresh spinach
-
2 cans chicken broth
-
1 cup white wine
-
2 cans mushroom soup
-
1 tablespoon yellow mustard

2 onions, diced
-
3 cups rice
-
1 pound of cooked chicken, shredded

Cooking oil, for sautéing

Dried thyme, to taste

Salt and black pepper, to taste
Directions
Heat oil in a large pan over medium heat.
Add onions to pan and sauté until softened. Sprinkle salt, pepper, and thyme over the onions and stir well.
Add sliced mushrooms to the pan and sauté. Stir in shredded chicken and rice.
Sprinkle spinach, into the pan, and top with white wine. Stir ingredients well.
In a separate bowl, whisk mustard, soup, and broth together. Pour over chicken, rice, and spinach and stir to combine. Season with salt and pepper, to taste and bring ingredients to a boil.
Cover pan and reduce heat to low. Cook meal for about 30 minutes, until rice is softened.
