Quinoa is such a versatile starch and serves as the base of this salad. With crunchy Brussels sprouts and the tang from the oranges, dried cranberries, and vinaigrette, this salad would make a good side dish for your next BBQ.
If you want to up your salad game, this recipe is one to try. I tried a grapefruit vinaigrette for this recipe and it was delicious! However, any citrus based dressing would work really well and add to all of the flavours of the salad.
While quinoa is cooking, wash and finely slice Brussels sprouts. Place sprouts into a large bowl and toss with oil and salt. Gently massage oil and salt into sprouts for about 2 minutes.
Add diced oranges, onions, Craisins, apple cider vinegar, and black pepper. Stir to combine.
Once quinoa is finished cooking, add to the sprouts and add vinaigrette. Mix well and cover bowl.
