Roast Beef with Gravy

When roast beef and gravy is on the meal plan, I take out my Yorkshire Pudding recipe. We can't have one without the other. This roast beef is the comfort food made better when it's enjoyed with family and friends.
Ingredients

1-2 pound beef roast

1 cup red wine
-
¼ cup soy sauce
-
3-4 garlic cloves, sliced into slivers

1 tablespoon ketchup
-
¼ cup butter
-
¼ cup flour
-
Salt and black pepper, to taste
Directions
Pierce the roast all over, with a sharp knife. Place slivers of garlic into the pierced areas.
Sprinkle salt and pepper all over the roast and place on a rack in the Instant Pot.
Pour red wine and soy sauce over the roast and cover the pot. Cook the roast on Meat function of the Instant Pot for 45 minutes.
Once the roast is completed, remove from the the Instant Pot and set aside to rest. Pour out beef drippings into a bowl.
On the sauté function, melt butter and then stir in the flour. Pour the drippings into the pot, along with the ketchup. Stir to combine.
If gravy is too thick, thin with ¼ to ½ cup of water.
Allow gravy to thicken, to your liking, before serving.
Slice roast and top with gravy when ready to serve.
