-
8 russet potatoes, diced
-
1 onion, diced
-
2 cups frozen corn
-
2 cups frozen peas
-
2 stalks celery, diced
-
1 carrot, peeled and diced
-
½ cup red wine
-
¼ cup ketchup
-
2 tablespoons soy sauce
-
1 cup beef broth
-
Approximately ½ cup of half & half
-
2 tablespoon seasoning salt
-
2 tablespoons butter
-
Sea salt and black pepper, to taste
Directions
Preheat oven to 375°F.
Place peeled and diced potatoes into a large pot. Cover potatoes with water and bring to a boil.
In a separate pot, combine ground beef, onion, red wine, beef broth, soy sauce, ketchup, and seasoning salt over medium-high heat. Bring mixture to a boil and cook until beef is cooked through.
Sprinkle flour over ground beef mixture and stir to combine. Pour into a 9x11 inch casserole dish.
In a medium pot, melt butter over medium heat. Add carrots, celery, peas, corn, salt, and black pepper. Cook veggies until carrots are softened.
Once potatoes are fork tender, drain the water from the pot. Add cream, butter, and salt to potatoes and mash until fluffy.
Layer cooked vegetables over the ground beef and then top with mashed potatoes.
Bake shepherd’s pie in preheated oven for 35 minutes, until potatoes are golden brown.
Enjoy 🖤
