I doubled the ingredients for this recipe but it’s easily adjustable if your’e feeding a smaller crowd. My family enjoys KFI Butter Chicken sauce but please substitute your favourite brand, if you prefer. I like to serve my Butter Chicken with rice balls (recipe is on my website) and warmed naan bread.
Ingredients

2 jars of your favourite Butter Chicken sauce

8 chicken thighs, skin on

½ cup olive oil
-
4 cloves garlic, minced

Chicken broth, to rinse jars of sauce

Salt and black pepper, to taste
Directions
Turn Instant Pot onto sauté function and heat oil.
Place minced garlic into pot and sauté until softened.
Season chicken thighs, skin side up, with salt and pepper to taste. Place chicken into pot, skin side down, in a single layer.
Season the other side of the chicken with salt and pepper while the skin side of the chicken browns.
Flip the chicken to sear the other side. Remove from Instant Pot and set aside. The chicken will not be cooked through, at this point, but that’s ok.
Pour both jars of Butter Chicken sauce into the pot. Rinse jars with a bit of chicken broth to loosen the remainder of sauce from the jars and pour into pot.
Bring sauce to a boil and add the chicken thighs back to the sauce. Switch the Instant Pot setting to slow cook and allow the chicken to cook through. You can keep the chicken at this setting until ready to serve.
