This is the perfect weeknight comfort food for dinner or for your next family get together. You’ll find many of the ingredients in your pantry and you can customize it with your favourite veggies and protein. So, cozy up in a blanket and enjoy a bowl of my hearty chilli.
Ingredients

1.5 pounds of lean ground protein

1 large onion, diced

3-4 cloves garlic, minced

1 cup red wine
-
¼ cup soy sauce
-
3 stalks celery, diced
-
2 cups bell peppers, diced

1 can corn, optional
-
1 cup mushrooms, diced
-
1 large can diced tomatoes (796 mL)

1 large can tomato sauce (680 mL)
-
1 can tomato soup
-
1 can red kidney beans, drained and rinsed

2 tbsp chilli powder

Salt and black pepper, to taste
Directions
For Instant Pot Method:
Using sauté function, add ground protein, onions, garlic, salt, pepper, wine, and soy sauce to Instant Pot. Sauté ingredients until your protein is cooked through.
Add celery, peppers, corn, and mushrooms to protein mixture.
Stir in tomato sauce, diced tomatoes, and tomato soup. Add kidney beans and sprinkle in chilli powder. Give your chilli a good stir and cover.
Set Instant Pot to either slow cook or pressure cook and allow ingredients to come together.
Once your Instant Pot setting completes cooking the chilli, it’s ready to serve. Top with shredded cheese, sour cream, avocado, or nothing at all.

*Instant Pot cook time: 4 hours. Consult IP manual to see variations for cook time.
*Slow cooker cook time: 8 hours
*Stove top cook time: 45-60 minutes
This chilli freezes well. I add it to a large freezer bag and freeze flat.
