Meatballs are a frugal way to stretch the ground protein you have on hand. I used Greek seasonings for this recipe, but you can change up the spices and seasoning to suit your taste or cuisine.

Ingredients
1 ½ pounds lean ground protein
2 eggs
3 garlic cloves, minced
¾ cup crushed crackers or breadcrumbs
2 tablespoons Greek or Italian seasoning
4 cups broth (whatever flavour that’s compatible with your protein choice)
2 tablespoons oil
Directions
Mix ground protein, eggs, garlic, crushed crackers, and seasoning together. Form into meatballs.
Turn Instant Pot on to sauté function and add oil to the pot to heat.
Fry meatballs until brown and then pour in broth. Allow broth to come to a boil.
Cover and cook meatballs until cooked through, approximately 20 minutes.
