Our friends from the Ukraine shared this recipe when they stayed with us. A great way to change up your usual pancake recipe. And, it's delicious too!
Ingredients

2 cups kefir, plain

2 cups all purpose flour

½ teaspoon baking soda
-
1 teaspoon white vinegar
-
3 tablespoon white sugar

1 apple, peeled and shredded

Cooking oil, for frying pancakes
Directions
Heat cooking oil in a frying pan over medium heat.
In a mixing bowl, combine kefir, flour, and shredded apple.
In a separate bowl, mix together baking soda and vinegar. Pour into kefir mixture.
Stir sugar into kefir mixture and mix well. The batter will be thick, like sour cream.
Drop pancake batter, by the tablespoon, into heated pan and cook for a couple of minutes on each side, until golden brown.
