This recipe makes enough to serve at a large gathering of friends and family. It also freezes well, in smaller portions, for "Life Happens" freezer meals.
Ingredients

2 pounds ground beef

1 package bacon, sliced into strips

4 cups basmati rice, cooked according to appliance instructions

2 cans tomato soup
-
1 large can diced tomatoes
-
1 head cabbage, chopped
-
1 onion, diced
-
5 cloves garlic, minced
-
2 teaspoon soy sauce
-
Garlic powder, to taste
-
Salt & Black pepper, to taste
Directions
Fill Instant Pot ¾ full with water and bring to a boil. Add chopped cabbage and cook until soft.
Heat a large frying pan over medium heat. Add ground beef, can of tomatoes, soy sauce, garlic, salt, and pepper, to taste. Fry until ground beef is cooked through. Mixture will have some liquid present but don’t drain it.
Once cabbage is cooked, drain in a colander and set aside.
In empty Instant Pot, Add 4 cups of rice and cover with water. Cook on Rice setting.
While rice is cooking, dice onion and slice bacon (I like to use kitchen scissors). Fry bacon and onion, with salt and pepper, over medium-high heat until bacon is cooked and onions are softened.
Once rice is cooked, its time to put everything together! Add the cooked cabbage, bacon and onion mixture, and ground beef mixture to the Instant Pot. Pour in 2 cans of tomato soup and mix all ingredients well. Keep casserole warm until ready to serve.
