The Fall can be a busy time of the year, with school and extra curricular activities. As the temperature starts to drop, healthy and hearty meals are perfect for a warm and cozy family dinner. I like to use the Instant Pot when I'm short on time but this recipe also cooks perfectly in a pot, on the stove.

Ingredients

4 cups potatoes, washed and diced

1 yellow onion, diced

1 cup chorizo, diced

1 large can lentils, drained and rinsed in a colander

2 cups white rice (any variety will work)

1 carton chicken or vegetable broth

2 cloves garlic, minced

1 tablespoon paprika

1 tablespoon cumin
-
½ tablespoon salt

1 teaspoon black pepper
Directions
Heat the Instant Pot on the sauté function and add diced chorizo.
Sauté chorizo until the oil in the sausage releases. An alternative would be to heat approximately 1 tablespoon of cooking oil in Instant Pot before adding chorizo to sauté.
Place diced potatoes, onions, and spices into the Instant Pot. Sauté until the potatoes start to soften.
Pour rice and rinsed lentils into the pot and mix ingredients well. Add broth and stir to combine.
Cover the Instant Pot with its lid and set to Rice function. Make sure that the lid valve is closed.
Cook pilaf for 15 minutes. Once setting is complete, either quick release the steam valve or allow the steam to release over time.
Serve pilaf with your favourite toppings or just on its own. My family enjoys this meal topped with a dollop of mayonnaise and some pickled red onions.

Recipe Note
*Stovetop Method:
Heat 1 tablespoon of oil in a heavy bottomed pot over medium-high heat. Add rice, lentils, potatoes, and chorizo to the pot and sauté ingredients for a couple of minutes or until coated with oil. Pour in the broth and bring the pot to a boil. Reduce heat and cover pot to allow ingredients to simmer for 20 minutes. Enjoy
