An easy way to use up those leftover fresh veggies. The briney taste of the dressing is the perfect addition to make this salad one of my favourites to eat. This recipe is also perfect for those Flashfood produce deals.
Ingredients

1 tbsp yellow mustard

1 cup Italian dressing
-
½ cup white vinegar
-
Italian seasoning, to taste

Salt and black pepper, to taste

¾ cup of cheese, cubed (I used marble cheddar for this recipe).

2 small onions
-
6 mini cucumbers
-
2 Roma tomatoes
-
2 bell peppers
-
3 stalks celery
-
4 carrots
Vegetables, chopped into bite sized pieces:
Directions
Prepare your veggies by chopping your vegetables into bite sized pieces. Add to a large salad bowl.
Cube your favourite variety of cheese and add to the vegetable mix.
In a mini food processor, add mustard, Italian dressIng, vinegar, Italian seasoning, salt, and pepper. Blend until well combined.
Pour dressing over the salad and stir to combine. Cover salad and refrigerate for 2 hours.
