Simple. Frugal. Basic. Plantains
by Jesi LopezMy family really enjoys fried plantains. I fry them up when slightly ripened so they are a bit firm and sweetened.

I drizzle lemon juice over my fried plantains and season with salt which complements the sweetness of this variety of banana. Eat as a snack on its own or add it as a side to your dinner of roast beef and pico de gallo.
Ingredients
-
4 plantains, slightly ripened and sliced
-
1 lemon, juiced
-
Olive oil, for frying
-
Salt, to taste
Directions
Heat oil in a large frying pan over medium heat.
Peel plantains and cut each one in half. Slice each half into thin slices lengthwise.
Fry plantains in batches until golden brown. Transfer to a platter, lined with paper towel, in a single layer.
Drizzle plantains with lemon juice and season with salt.
Enjoy 🖤
