If you need to change up your side dish options, rice pilaf is perfect! I used my favourite vegetable chopper to prepare my vegetables and keep the cuts similar for quick and even cooking.
Ingredients

2 bell peppers, diced

1 onion, diced

2 celery stalks, diced

1 can corn, drained

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon salt
-
1 teaspoon black pepper

1 teaspoon Italian seasoning

2 cups rice
-
3 ½ cups chicken broth
Directions
Heat oil in a pot or pan over medium heat. Add minced garlic and sauté until softened.
Add diced vegetables and sauté. Season with salt, pepper, and Italian seasoning.
Once vegetables have softened, add the can of corn, rice and chicken broth to the pot. Stir well.
Cover pot or pan with a lid and simmer over low heat for 20 minutes or until rice is cooked.
