Roast chicken is synonymous with Sunday family dinners. I like to cook my roast chicken in a Dutch oven to simplify things. The result is perfectly cooked chicken with a golden, crispy finish.

I keep things simple with my roast chicken recipe. Just olive oil and seasoning salt to coat the chicken and bake in oven to perfection. When whole chickens go on sale, I stock up to whip up this recipe.

Ingredients

1-2 whole chickens
Olive oil, to drizzle and coat chicken
Seasoning salt, to taste

Directions

Preheat oven to 375°F.
Prepare a large Dutch oven by lining it with oven safe parchment paper.
Rub olive oil all over the chicken(s). Sprinkle seasoning salt all over the chicken(s), to taste.
Place seasoned chicken(s) into the Dutch oven, cover, and place into preheated oven for 60 minutes.
At the 60 minute mark, remove Dutch oven lid and place the chicken(s) back into the oven and broil for 3 to 4 minutes, until the chicken is golden brown.
Remove chicken(s) from the oven and allow to rest for a few minutes before carving.
