Summertime is for barbecues and street corn! When corn on the cob is in season (and on sale), this recipe is definitely on my meal plan rotation.
Ingredients

5 ears of corn, boiled or grilled

½ cup sour cream

½ cup mayonnaise

1 cup cheddar cheese, shredded

1 tablespoon Tajin seasoning
Directions
Fill a large pot with water and bring to a boil over high heat.
Place corn into the pot and boil for approximately 8 to 10 minutes.
While corn is cooking, mix together sour cream, mayonnaise, cheese, and Tajin, on a large plate.
Line a work surface with parchment paper and place the cooked corn on it. Roll each ear of corn into the cheese mixture until well coated.
