Pasta salads make great dinner salads and travel really well for picnics and barbecues. In my version, I added all the veggies to round it out to make a complete meal. Simple and delicious!
Ingredients

1 box rotini pasta, cooked and chilled
-
1 package of smokies, cooked, diced, and chilled

1 cup of your favourite hard cheese, diced into small cubes

1 pint of tomatoes, diced
-
1 cucumber, diced
-
2 bell peppers, diced
-
3 - 4 dill pickles, diced
-
½ jar black or kalamata olives, diced (optional)
-
1 small onion, diced
-
2 celery stalks, diced
-
1 - 1 ½ cups Italian dressing
-
1 tablespoon yellow mustard
-
Salt and black pepper, to taste
Directions
Cook rotini pasta, according to package instructions. Drain and place into the refrigerator to chill.
Cook or barbecue smokies, according to package instructions. Cut smokies into cubes and chill in the refrigerator.
Dice vegetables and cheese and place into a large serving bowl.
In a separate bowl, whisk together Italian dressing, mustard, salt, and pepper.
Add chilled pasta and smokies to the serving bowl. Pour the dressing over the salad and toss well.
Keep refrigerated until ready to serve.
