Spanish Steak Sandwiches

There’s just something about recipes that have been passed down from family. Spanish steak sandwiches are a family favourite in my house and I’m happy to be able to share the recipe with you.
Ingredients

2 baguettes*, divided and sliced

2 large steaks, thinly sliced

1 cup cilantro, minced

¾ cup red wine vinegar

½ cup olive oil, divided

½ cup butter, softened

7 garlic cloves, minced and divided

1 tbsp sriracha sauce

½ cup mayonnaise
-
4 Roma tomatoes, sliced

3 avocado, peeled and cut in half

Salt and Black pepper, to taste
Directions
Thinly slice steak and place into a large frying pan.
Using a mini food processor, make the marinade with 3 cloves of garlic, ¼ cup of olive oil, red wine vinegar, cilantro, and ½ teaspoon each of salt and pepper. Blend well.
Pour marinade over steak slices to coat them. You can start to fry steak right away or allow steak to marinate for a few hours in the refrigerator.
Once marinated to your preference, fry steak on the stove over medium heat, until all the moisture is gone.
Using a food processor, mince garlic and combine with butter and ¼ cup of olive oil. Blend well and spread over baguette halves. Broil baguette halves, butter side up, until golden brown.
Slice tomatoes and set aside.
Combine mayonnaise and sriracha sauce together until well combined.
For avocado spread, blend peeled and seeded avocado halves with ½ teaspoon of salt.
Time to build your sandwiches! Spread toasted baguettes with avocado spread and sriracha mayo. Layer on steak slices and tomatoes. Top with baguette slice.
