Stuffed pork loin is perfect for a weeknight meal or for a special occasion. A good knife will help you to carve the pork loin nice and flat.
Ingredients

2 pounds pork loin, carved into a flat piece

2 apples, peeled and diced

1 celery stalk, diced

½ cup walnut pieces

¾ cup dried cranberries

½ cup breadcrumbs
-
1 teaspoon salt
-
¾ teaspoon black pepper
-
¾ teaspoon dried thyme
Directions
Preheat oven to 350°F.
Prepare the stuffing by mixing diced apples, celery, walnuts, dried cranberries, bread crumbs, thyme, salt, and pepper. Set aside.
Carve the pork loin until it is one flat piece of meat. Sprinkle each side with salt and pepper, to taste.
Spread the stuffing evenly over the pork loin. Roll the loin up like a jelly roll and secure with kitchen twine.
Roast pork in the oven for 60-75 minutes, or the internal temperature is between 145°F to 160°F.
Once pork is cooked through, slice and serve along with your choice of side dish.
