Sweet Chilli Chicken and Cucumber on Garlic Rice

This recipe is always a big hit with my family! The sweet chilli chicken combined with the tangy crunch of the cucumber salad compliment each other to make a delicious dinner.
Ingredients

3 chicken breasts, cubed

2 cups rice
-
4 cloves of garlic, minced
-
4 cups water
-
3 tbsp cooking oil
-
1 cup sweet chilli sauce
-
Salt, black pepper, and garlic powder, to taste

Sesame seeds
-
2 cups cucumber, chopped
-
1 cup carrots, shredded
-
½ cup fresh cilantro, minced
-
2 tbsp rice vinegar
Cucumber Salad
Directions
In a medium sized pot, sauté half the garlic in half the oil until garlic has softened. Add the rice and sauté over medium heat.
Add ½ teaspoon each of salt and black pepper to rice mixture and then add 4 cups of water. Stir to combine. Bring rice to a boil and then reduce heat, cover the pot, and simmer for 20 minutes.
In a pan, sauté the remaining minced garlic in the remaining cooking oil. Add cubed chicken, salt, black pepper, and garlic powder to taste. Sauté chicken until it’s golden brown.
Add ½ cup of sweet chilli sauce to the chicken. Mix and simmer until chicken is cooked through.
Make a salad with the chopped cucumber, shredded carrots, cilantro, rice vinegar, salt, and black pepper to taste. Mix until well combined.
Time to plate! Spoon chicken over a bed of rice and top with cucumber salad.
Sprinkle chicken and salad with sesame seeds and a dollop of sweet chilli sauce.
