Thai Pork Skewers

Tender, marinated pork skewers with crispy garlic bread and a crunchy salad of cucumbers, carrots, and cilantro. These flavours bring me right back to Thailand! I hope you enjoy this dish as much as I do. 🖤
Ingredients

1 pound pork loin, thinly sliced

½ cup sweet chilli sauce

2 tbsp soy sauce

2 tbsp sesame oil

½ tsp garlic powder

½ tsp black pepper

2 garlic cloves, minced

2/3 cup sweet chilli sauce

2 tbsp soy sauce
-
½ cup peanut butter
-
¼ cup water
Marinade:

Directions
Thinly slice the pork loin and place into a large freezer bag.
Add marinade ingredients to pork and seal the freezer bag. Massage marinade into pork until the slices are well coated. Set aside.
Using a mini food processor or blender, combine garlic, sweet chilli sauce, soy sauce, peanut butter, and water. Purée until smooth.
Pierce slices of marinated pork onto metal skewers. Make sure to keep a bit of room between each slice to allow for even cooking.
Place skewers into air fryer and set to 375°F. Cook for 17-20 minutes.
Once cooked through, remove skewers. Serve pork with garlic toast and a side of sliced mini cucumbers, shredded carrots, and chopped cilantro.

Recipe Note
* You can also grill these pork skewers on the Bbq to add another layer of flavour.
* Partially freeze your pork loin to make slicing easier. An electric carving knife also works beautifully.
