When you combine cheese, mashed potatoes, and bacon, you'll end up with a delicious side dish. There's a little extra effort involved when making twice baked potatoes, but it is so worth it! This recipe serves a big crowd but the ingredients can easily be adjusted for a smaller crowd.
Ingredients

8 to 10 potatoes, washed well

Drizzle of olive oil

Salt ad black pepper, to taste

½ package of bacon, cooked and crumbled

2 to 3 green onions, minced and green onion tops separated from the white parts

1 cup cheddar cheese, shredded

1 tablespoon Everything but the Bagel seasoning

1 cup sour cream
Directions
Preheat oven to 375°F.
Wash whole potatoes and dry well.
Rub each potato with olive oil and place onto a parchment paper lined baking sheet.
Sprinkle potatoes with salt then pierce each potato, all over, with a fork.
Place bacon on a lined baking sheet and place into preheated oven, along with the potatoes, for 18 minutes.
While bacon and potatoes bake, shred cheese and mince onions. Set aside the green tops of the onions and place the white parts into a mixing bowl.
Crumble the bacon, once it’s finished cooking, and add it to the mixing bowl. Stir in cheese, bagel seasoning, and black pepper.
Once potatoes are cooked, remove from the oven and decrease temperature to 350°F.
Slice each potato in half, scoop out most of the insides, and place into the mixing bowl with cheese, onions, and bacon. Add sour cream to the bowl and mix well.
Scoop heaping spoonfulls of filling into each potato cup. Sprinkle cheese onto the filling of each potato. Bake for 30 minutes.
Garnish the potatoes with minced green onion tops.
