Pulled Pork (Instant Pot)

When pork shoulder roasts go on sale, definitely whip up a batch of pulled pork for dinner. You can slow cook your roast in the oven or use an Instant Pot to speed up the process. Either way, it's delicious!

Pulled pork can be served on it's own or tucked into Sweet Potato Buns or served in a soft taco. However you serve it, you are sure to love it.

Ingredients

1 pork shoulder roast
1 bottle Chicken and Rib barbecue sauce
1 can of Coke
1 tablespoon cornstarch
¼ cup water

Directions

Place pork shoulder into the Instant Pot and pour Coke and barbecue sauce over the roast.
Secure lid over the pot and turn Instant Pot to Meat/Stew function. Cook for 1 hour.
Once setting is completed, remove the roast from the Instant Pot and place into a baking dish.
Add the cornstarch and water slurry to the sauce in the Instant Pot. Cook sauce on Sauté function until thickened.
Shred roast and then add to the thickened sauce in the Instant Pot. Stir to coat the meat with the sauce.
