Sweet Potato Buns

These buns are SO good! The slight sweetness from the potato compliments your sandwich ingredients so well. I made this recipe to serve with my Pulled Pork recipe and it was a huge hit with my family.
Ingredients

2 large sweet potatoes, peeled and diced

All purpose flour, a ratio of one cup to one cup of sweet potato

¼ teaspoon salt per 1 cup of sweet potato

1 teaspoon baking powder per 1 cup of sweet potato
Directions
Preheat oven to 400°F.
Peel and dice sweet potatoes. Place into Instant Pot basket.
Turn Instant Pot to Steam function, and cook potatoes for 15 minutes.
Release the steam on the Instant Pot and then remove basket and rinse the potatoes, with cold water, to help them cool down.
Line a work surface with parchment paper. Divide cooled sweet potatoes into 1 cup portions.
Add one cup of flour, one teaspoon baking powder, and ¼ teaspoon salt to each 1 cup portion of sweet potatoes. Mix each portion well.
Divide your dough into smaller portions, that can be shaped into a ball. Place each ball of dough onto a parchment lined baking sheet.
Bake in preheated oven for 20 minutes. Once baked through, allow buns to cool slightly before adding your sandwich filling.
